Slow Cooker Cheesy Mushroom Potatoes image

Super easy way to make cheesy potatoes if your oven is too full. Basic ingredients that we all have on hand. Add diced ham to make this dish the main course.

2 tablespoons olive oil
1 teaspoon butter
½ pound white mushrooms, sliced
5 large Yukon Gold potatoes, quartered and sliced
4 cups shredded Cheddar cheese
½ cup milk
¼ cup minced onion
2 tablespoons butter
1 tablespoon garlic salt
¼ teaspoon ground black pepper

Steps:

  • Heat olive oil and 1 teaspoon butter in a skillet over medium heat. Cook and stir mushrooms in butter until tender and browned, about 10 minutes.
  • Stir cooked mushrooms, potatoes, Cheddar cheese, milk, onion, 2 tablespoons butter, garlic salt, and black pepper together in a slow cooker.
  • Cook on High until potatoes are tender and Cheddar cheese is melted, about 4 hours.
