SLOW COOKER APPLE FRENCH TOAST image

1/2 c butter
2 medium granny smith apples, cored and chopped
1/2 c chopped pecans
1/2 c chopped walnuts
1/2 c packed brown sugar
1/2 c pure maple syrup
1 loaf challah bread (about 1 lb.) cut into cubes
6 large eggs
2 c milk
2 tsp ground cinnamon
1 Tbsp vanilla extract
1 pinch salt
confectioners' sugar

Steps:

  • 1. In a medium-sized skillet, melt the butter. Cook the apples, pecans, walnuts, brown sugar, and syrup in the butter for 10 minutes, stirring often. Place the apple mixture into a slow cooker.
  • 2. Place the bread in a large bowl; set aside.
  • 3. In a medium-sized bowl, combine the eggs, milk, cinnamon, vanilla, and salt. Pour the egg mixture over the bread and stir to coat. Add the bread mixture to the slow cooker and stir.
  • 4. Cover and cook on HIGH for 2-3 hours. Sprinkle with confectioners' sugar. Drizzle additional maple syrup on top, if desired.
