SLOVAKIAN SAUERKRAUT SOUP image

If you like Kielbasa sausage you will like this..And...who doesn't love Kielbasa sausage? COOK IN A BIG, BIG POT !! Enjoy !!

Number Of Ingredients 11

2 lb kielbasa sausage, cut into 1/4 -1/2 inch slices
1 pkg sauerkraut, not canned
4-5 carrots, cut into one inch pieces lengthwise
4 celery stalks, chopped
4-6 clove garlic
8 oz mushrooms, (shitake, oyster, or crimini), quartered
1 medium onion, diced
lots of black pepper to taste
1 1/2 qt water
1 can(s) beef broth
1 - 2 Tbsp sugar

Steps:

  • 1. Place all ingredients except the can of beef broth and sugar into a BIG stew pot. Bring to a boil; turn down the temperature to low and simmer for about 3 hours. Add the beef broth and one tablespoon of sugar at a time. You will wan to taste the soup before adding more sugar. You don't want it to be too sweet. Cook for at least another hour. The Sauerkraut should turn dark when ready to eat.
