SKILLET PENNE WITH SAUSAGE AND SPINACH image

1 T EVOO
1 lb (4 links) sausage-casings removed
2 1/4 C low sodium chicken broth
2 1/4 C water
3 C Penne pasta
1/2 C oil-packed sun-dried tomatoes, rinsed and chopped fine
1 (6-oz) bag baby spinach
1/2 C grated Parmesan cheese
1/4 C pine nuts, toasted

Steps:

  • 1) Brown Sausage: Heat EVOO in 12-inch skillet over medium high heat until just smoking. Add sausage, breakiing it up with a spoon. Cook until lightly browned, about 3 min. Stir in garlic and cook about 30 sec. 2) Simmer Penne: In same skillet with sausage, stir in broth, water, and pepper. Increase heat to high and cook, stirring often until penne is tender and liquid has thickened, 15-18 minutes. 3) Wilt Spinach: Stir in spinach, a handful at a time. Off heat, stir in Parmesan cheese and nuts. Season with pepper. Serve.
