Steps:
- 1. In a large cast iron pan (or ovenproof nonstick pan), heat 1 Tbsp butter, add sliced onion and sugar. Cook until onions are caramelized, about 5 minutes. Spread onions evely around bottom of pan, set aside.
- 2. In another pan, boil pasta in water about 2 minutes less than package instructions. Drain pasta and put back into still warm pot. Stir in melted 1/4 cup butter to cover all noodles. Add milk, cream, mustard, pepper and 4 cups cheese, and stir well. Pour into cast iron skillet over sauteed onions.
- 3. Bake in preheated oven at 350 degree F, uncovered for 30 to 40 minutes, or until all liquid is absorbed. Remove from oven, sprinkle with remaining cheese and then panko. Broil until top is lightly browned, about 1 minute.
- 4. Note: I would suggest covering the pan for the first half of baking and then remove cover. Part of the pasta was crunchy, from baking uncovered.
