Our favorite way to eat potatoes!(Not that there's really a bad way!)

Steps:
- Preheat oven to 400F. Spread the cut potatoes in a baking dish and pour oil over. Add remaining ingredients, except parsley and toss to coat. Roast for 45 min. to 1 hr. stirring gently a couple of times during cooking time, until potatoes are tender and starting to brown and crisp. Remove from oven and gently stir in the parsley.
