Simple Homefries image

Simple yet easy, effective and filling. :) This was a thrown together meal with a little bit of everything that we had leftover in the fridge. Turned out delicious. Feel free to improvise, throw in ham or chopped up bacon or sausage. Be creative and leave comments to let me know how you made it better!

Number Of Ingredients 9

1 large potato
1/4 cup(s) onions
1 - egg per person
1/2 - tomato
- cheese, shredded (optional)
- salt and pepper, to taste
- garlic powder, to taste
- cooking oil
- buttered toast

Steps:

  • i usually boil the potato(es) the night before so i can skin them and have them ready for cooking in the morning,
  • Dice your potato, onion and tomato
  • Heat 2 tablespoons of oil in a skillet
  • Put potatoes in the heated oil and allow them to brown
  • Throw in onions when the potatoes are almost done browning
  • Allow onions and potatoes to saute while you scramble eggs in a bowl
  • Pour in scrambled eggs and mix potatoes and onions in while cooking
  • Put tomatoes in at the last minute, just to warm them
  • Sprinkle shredded cheese, salt, pepper and garlic into mix. Allow cheese to melt
  • Pour mix over buttered toast and enjoy :)
