Simple yet easy, effective and filling. :) This was a thrown together meal with a little bit of everything that we had leftover in the fridge. Turned out delicious. Steps:
- i usually boil the potato(es) the night before so i can skin them and have them ready for cooking in the morning,
- Dice your potato, onion and tomato
- Heat 2 tablespoons of oil in a skillet
- Put potatoes in the heated oil and allow them to brown
- Throw in onions when the potatoes are almost done browning
- Allow onions and potatoes to saute while you scramble eggs in a bowl
- Pour in scrambled eggs and mix potatoes and onions in while cooking
- Put tomatoes in at the last minute, just to warm them
- Sprinkle shredded cheese, salt, pepper and garlic into mix. Allow cheese to melt
- Pour mix over buttered toast and enjoy :)
