SHRIMP STROGANOFF OVER FETTUCINE image

1/4 cup butter
1 1/4 pounds uncooked shrimp
1 cup sliced mushrooms
2 tbsp minced onion
2 cloves garlic, minced
2 tbsp flour
3/4 cup chicken broth
3/4 cup lo-fat sour cream
1 tbsp fresh dill
salt, fresh ground pepper to tastpinch of crushed red pepper
8 oz fettucine

Steps:

  • Melt 2 tbsp butter in non-stick frying pan over med-high heat. Add shrimp and cook. Transfer to a bowl and keep warm. Melt some more butter in pan and cook mushrooms for a few minutes, then add onion and garlic, and cook for 3 more minutes. Blend in flour and stir til bubbly. Whisk in broth, breaking up lumps. Stir in sour cream, chopped dill and shrimp. Heat but don't boil. Combine noodles.
