Shrimp Scampi image

Shrimp scampi is a recipe that sounds super fancy (and they charge a fortune for at a restaurant), but it's very easy to make. The delicate shrimp are bathed in a buttery garlic sauce. 1 lb raw shrimp (cleaned and deveined)
1 tsp minced garlic
3 Tbsp lemon juice
1/4 tsp crushed red pepper
2 tsp Old Bay seasoning
2 Tbsp chopped parsley
2 c cooked white rice
1 stick butter/margarine

Steps:

  • 1. In frying pan over medium heat melt butter and sauté garlic. Do not brown garlic!!
  • 2. Add shrimp and lemon juice. Cook for a few minutes just until shrimp turns pink.
  • 3. Add all remaining ingredients except the white rice. Stir frequently and cook for 5-10 minutes to allow butter sauce thicken some and blend flavors. (I like to measure ingredients before I begin. This recipe tends to cook up quickly.)
  • 4. Spread hot white rice over bottom of casserole dish. Poor shrimp with all butter sauce over white rice and serve immediately. The rice always soaks in some of the butter sauce and tastes amazing.
  • 5. Optional - I sometimes stir in a can of French cut green beans which is always delicious.
  • 6. Note: If you double this recipe do not double the Old Bay or red pepper. If you do, it will be a very hot and spicy dish.
