1/2 canned chipotle pepper in adobo sauce, chopped
2 flour tortillas (8 inch)
1/4 lb. cooked cleaned medium shrimp
4 thin avocado slices
2 tsp. chopped fresh cilantro, divided

Steps:

  • Combine first 3 ingredients; spoon down centers of tortillas.
  • Top with shrimp, avocados and cilantro.
  • Roll up tortillas; cut into 1-inch-thick slices.
