Steps:
- Heat Oil add onions & chorizo until cooked, about 7 minutes. Stir in garlic
- Add 1 3/4 cup of water. Stir in rice and Alcaparrado. Boil cover and reduce to medium-low. Simmer 12 minutes. Add shrimp simmer 13 minutes until rice is tender and water is bsorbed
- Arrange pimiento strips and garnish with parsley
