SHRIMP A LA GRECQUE image

1T olive oil
3 garlic cloves, minced
2 14oz cans diced tomatoes
1lb large shrimp, peeled and deveined
1/2c chopped fresh parsley
1c crumbled feta cheese
kalamata olives or capers (optional)
Lemon juice

Steps:

  • Heat broiler. Place oil and garlic in large broiler, saute 2-3" or until browned. Add the tomatoes and heat to boiling until sauce thickens. Add shrimp and parsley and continue cooking until shrimp curl. Sprinkle on feta and place under broiler until cheese melted and browned. Squeeze lemon juice over dish prior to serving.
