SEAFOOD GUMBO (LOW FAT) image

2 1/2 c all purpose flour
1 TBl olive oil
1 c chopped celery
1 c chopped green bell pepper
1 c chopped onion
1 c chopped green onion
5 cloves garlic, pressed
1 TBl file powder
7 (14.5 oz) fat free chicken broth
1/2 tsp pepper
1 TBL salt
1/2 tsp ground red pepper
1 (10-oz) pkg frozen cut okra
3 lb unpeeled fresh shrimp
2 lb fresh crabmeat
1 lb crawfish meat
2 (12-oz) containers fresh oysters
Hot cooked rice

Steps:

  • Sprinkle flour evenly in 15x10" baking pan. Bake 400F stirring often for 20 min or until caramel colored. Cool Pour oil in 12 qt stockpot. Place over medium. Add celery and next 5 ingredients, cook stirring constantly 5-7 min, or until tender Add toasted flour, broth and next 4 ingredients. Bring to boil. Reduce heat, simmer 30 min. Add okra and simmer 30 mikn Peel shrimp, devein. Drain flake crabmeat. Remove any bits of shell. Add shrimp & crabmeat and oyster to stockpot. Cook 15-20 min or until seafood done. Stir in file powder. Serve with rice.
