SCALLOPED POTATOES WITH LEEKS image

Number Of Ingredients 8

1/4 stick unsalted butter
2C (1lb Leeks) pale green and white parts only
Salt and pepper
1C whipping cream
2 cloves garlic pressed
4 medium sized potatoes (zak likes red) sliced thin (thinner blade on cuisinart) 1/8" to 3/16".
1/4 lb gruyere cheese (get the good stuff) shredded coarsely
1/6 C grated Romano or Parmesan (Romano is better) Grate it fresh no prepared crap.

Steps:

  • Preheat oven to 375. Grease ~2 quart round caserole pan w/butter (7-8" by 3" deep), best to have one with straight sides. Saute leeks in butter until soft, salt and pepper, set aside Press garlic cloves into cream Arrange half the potatoes in greased pan. Salt and pepper. Pour leeks over. Put 1/2 gruyere cheese over leeks and 1/2 cream w/garlic. Then rest of taters, top with rest of cream/garlic and gruyere cheese, Sprinkle top with Romano. Tent very outer edge of pan with foil. Bake at 375 for 1 hour, then turn down to 325 for another 45 minutes. Party size: Deep dish lasagna pan, 5 lbs red potatoes, 3X everything.
