Steps:
- Spread asparagus into a single layer in a large sauté pan, top with shallots, and add 3 tablespoons water. Cover and place over high heat. Cook till asparagus is bright green and still crisp, about 5 minutes. Uncover and add butter. Sauté till asparagus is tender and shallots are golden brown, about 5 to 7 minutes. Remove pan from heat and season with lemon juice, salt and pepper.
