Sausage Cheese & Tomato Pasta image

A perfect sausage lover dish, bursting with flavours using simple common ingredients.

Number Of Ingredients 14

3 Pork Sausage (Chopped up into chunks)
1/2 Red Pepper (Sliced)
1/2 Onion (Sliced)
1 Garlic Clove (Diced)
1 Cup Of Penne Pasta
1 tbsp Olive Oil
1/2 tbsp Olive Oil
1 Garlic Clove (Diced)
1/2 Red Chilli (Diced)
1 tsp Dried Basil
1/2 Tin Of Chopped Tomatoes
1/2 Cup Vegetable Stock
1/2 tsp Tomato Puree
30g Grated Cheese (Cheddar ideally)

Steps:

  • Boil the pasta. Meanwhile in a frying pay heat 1 tbsp of olive oil. Once the oil is hot add the sausage and 1 diced garlic clove and fry for 3 - 5 minutes. Then add the peppers and the onion and continue to cook for a further 5 - 10 minutes until the sausage is cooked and the vegetables are soft.
  • As the sausages continue to cook, prepare the sauce. In a small pot heat the olive oil and then once hot add the garlic clove, red chilli and the basil into the pan and cook for 3 minutes. Then add the chopped tomatoes, vegetable stock and tomato puree and bring to the boil. Once boiling slowly add the cheese whilst stirring and allow the cheese to fully melt before removing the sauce from the heat.
  • Mix together the pasta, sausage and vegetable and then add the sauce on top. Serve with grated parmesan and garlic bread.
