SAUSAGE, BEANS AND GREENS image

Number Of Ingredients 8

3/4 lb italian sausage, biased cut, 1/2 in pieces
1 med onion, chopped (1/2 C)
2 19oz cans white kidney beans (cannellini ), rinsed and drained
3/4 C red-sodium chicken broth (regular was too salty!)
1/4 C dry white wine or chicken broth
2 T fresh thyme snipped or 1 t dried thyme crushed
4-5 C (alot!) torn fresh spinach
1/4 C shredded parmesan cheese (optional)

Steps:

  • 1. In a large saucepan, cook sausage and onion over med heat 5 min or until onion is tender. Drain off fat. Add beans, the broth, the wine and thyme. Bring to boiling; reduce heat. Cover and simmer for 5 min. Stir in spinach; heat through. 2. To serve, ladle into bowls. If desired, sprinkle with Parmesan.
