Sausage Bean Soup image

A friend brought this soup to a tailgate party. Everyone raved about it!

Number Of Ingredients 8

1 lb pkg. Kielbasa sausage
1 medium onion, chopped
15 oz can Italian stewed tomatoes
15 oz can Cajun or Mexican stewed tomatoes
Basil, oregano, garlic salt and bay leaves, to taste
15 oz can kidney beans
15 oz can whole kernel corn
Shredded Parmesan cheese, if desired

Steps:

  • 1. Cut Kielbasa into thin slices.
  • 2. In soup pan or dutch oven, saute sausage and onions; add tomatoes, with juices, and seasonings. Simmer approximately 20 minutes.
  • 3. Just before serving, add beans and corn, with juices. Heat through.
  • 4. Sprinkle with Parmesan cheese, if desired and crusty French bread.
