Saucy Breaded Pork Chops image

This recipe was passed down from my Mother & has been my absolute favorite since childhood. It's not the healthiest recipe, but it's worth the splurge once in awhile when you're craving something oh so yummy! I like to serve this with Mashed Potatoes & Green Bean Casserole for a complete home cooked meal.

6 large bone in pork chops (or boneless - opt.)
1 c plain bread crumbs (or seasoned - opt.)
2 eggs
2 Tbsp milk
1 c chicken broth/bouillion
1 small onion (sliced in half rings)
1 tsp garlic salt
1 tsp salt and pepper
1 pinch paprika, sweet mild
3 Tbsp oil (or bacon grease for added flavor)
1 large electric skillet

Steps:

  • 1. Pre-season pork chops with salt/pepper & rub into meat. In a large bowl mix together egg and milk. In another bowl add bread crumbs/flour, and garlic salt/paprika. Stir together until well blended.
  • 2. Pre-heat oil in Electric Skillet. Dip both sides of pork chops in egg mixture, then into breadcrumb mixture & add to pan. Repeat until done with all 6 chops. Fry until really brown & crispy. After they're browned add 1/2 cup of chicken bouillion around the chops and onions either on top or around them in the bouillion. (Your preference). Turn pan down & simmer for 1 1/2 hours. Check periodically if chops seem too dry add the other 1/4 - 1/2 cup of bouillion. Cut to check doneness after 1 1/2 hrs. They should fall apart with a fork. If not then cook for another 15-20 mins longer. Serve on platter & spoon the sauce/onions on top. Enjoy.
