Salmon Patty Cakes image

Delicious as an appetizer or as a meal.

Number Of Ingredients 10

1/4 cup(s) red bell pepper
1/4 cup(s) green onions
1/4 cup(s) mayonnaise
1 tablespoon(s) lemon juice
1/4 teaspoon(s) seasoning salt
1 dash(es) cayenne pepper (more or less for taste)
1 - egg, beaten
1 package(s) salmon 6 oz
1 cup(s) bread crumbs
3 tablespoon(s) butter

Steps:

  • Finely chop red pepper and green onion. Put both in a mixing bowl and add mayonnaise, lemon juice, seasoned salt and cayenne pepper. Stir.
  • Stir in beaten egg, salmon and 4 tablespoons bread crumbs.
  • Form 6-8 balls, roll balls in remaining bread crumbs and flatten.
  • Heat butter in a frying pan and fry over medium heat until golden brown on both sides. About 5 minutes per side.
