SAGE-CRUSTED PORK ROAST WITH ROASTED VEGETABLES image

PORK ROAST
1 cup Bread Crumbs
1 cup French Fried Onions, crushed
1/4 cup Parmesan Cheese, shredded
1 Tsp minced Sage
1/2 Tsp Salt
1/4 Tsp Black Pepper
2 Tbsp Dijon Mustard
3 lb Pork Roast, boneless
VEGETABLES
2 Leeks, cut into 4" pieces
1 Red Bell Pepper, cut into slices
2 Sweet Potatoes, cut into slices
1 Cauliflower,cut into florets
2 Broccoli, cut into florets
Olive Oil
Salt and Pepper

Steps:

  • PORK Roasst Preheat oven to 450* Coat roasting pan with nonstick spray Combine Bread Crumbs, Onions, Parmesan, Sage, Salt and Pepper in Bowl, then spread on baking sheet Smear Mustard over entire roast. Roll in Bread Crumb mixture and place in roasting pan. VEGETABLES Place all vegetables in large bowl and drizzle Olive Oil over, then seasoning with Salt and Pepper. Arrange Sweet Potatoes in bottom of roasting pan. Then place Roast in pan, then placing remainder of vegetables around roast. Cook for 15 minutes @ 450* then reduce temperature to 275* for about 90 minutes or until roast reaches 155* Remove pan from oven and let rest for 10 minutes
