SAFFRON ORZO SALAD WITH PINE NUTS image

Best served at room temperature. Be sure and use FRESH herbs.

1/2 c currants
1 c boiling water
1 16 oz pkg orzo pasta
1/2 c olive oil
1/4 tsp ground saffron
2 clove garlic, minced
3 Tbsp fresh lemon juice
2 tsp ground turmeric
1 tsp sugar
1/2 tsp salt
1/4 tsp ground cumin
1/4 tsp pepper
2/3 c pine nuts, toasted
1/4 c chopped fresh mint
1/4 c chopped fresh flat leaf parsley
3 Tbsp chopped fresh cilantro

Steps:

  • 1. Combine currants and boiling water and let stand for 5 minutes. Drain and set aside. Cook orzo according to package directions; drain. Set aside and keep warm.
  • 2. Combine oil and saffron in a bowl. Let stand for 15 minutes. Stir in garlic and next 6 ingredients. Add orzo and toss. Let cool. Add currants, pine nuts, and remaining ingredients. Toss.
