Russ's German Potato Salad image

This vintage recipe is sure to please the entire family.

Number Of Ingredients 11

2 1/2 C. water
1/3 C. cider vinegar
1 Tbs. salt
1/2 C. sugar
3 Tbs. cornstarch
1/2 C. bacon, diced (with drippings)
1/2 C. onions, diced
1/2 C. green peppers, diced
1 Tbs. parsley
1/4 tsp. pepper
5 lbs. cooked potatoes (may be sliced)

Steps:

  • Place 2 cups water, vinegar, salt and sugar in a saucepan. Heat to boiling. Mix cornstarch and 1/2 cup of water, add to saucepan mixture and boil until thickened. Stir in bacon. Add cooked potatoes. Stir. Add onion, green peppers, parsley, and additional salt and pepper to taste.
