ROASTED RED PEPPER BRUSCHETTA image

1 loaf french bread, sliced lengthwise
olive oil
1-12 oz. jar roasted red peppers, drain and chop
feta, Gorgonzola or blue cheese

Steps:

  • Drizzle olive oil on cut sides of bread. Bake in 375 oven 2 minutes. Put chopped red peppers on top, then sprinkle cheese on. Bake for 6-8 minutes more.
