ROASTED GARLIC-PARMESAN MASHED POTATOES image

2 garlic bulbs
olive oil
3 pounds potatoes, peeled and quartered
2 teaspoons salt, divided
1/4 cup whipping cream
1/4 cup shredded Parmesan cheese
3 tablespoons butter or margarine, softened
1/3 cup chopped parsley
1/2 teaspoon pepper

Steps:

  • 1. Cut off pointed ends of garlic bulbs. Drizzle with oil and cover with foil. 2. Bake at 425 degrees for 30 minutes, cool to touch. Squeeze pulp from garlic clove. 3. Boil potatoes in salted water 20-25 minutes and drain. 4. Mash potato with ricer. Stir in garlic, 1 teaspoon salted, whipping cream and next four ingredients.
