ROASTED CHERRY TOMATO PASTA image

Number Of Ingredients 8

2 lbs cherry tomatoes halved
1/4 cup extra virgin olive oil
1/2 cup grated pecorino Romano cheese
2 Tbsp dried bread crumbs
3 cloves garlic finely chopped
1 pinch red pepper flakes
1/4 cup rough chopped fresh basil
16 oz of your favourite pasta cooked al dente.

Steps:

  • Preheat oven to 450 degrees F. Place cherry tomatoes into an ovenproof dish and toss with olive oil. Roast tomatoes for 30 minutes on second to highest rack mixing every 10 minutes to maximize caramelization. Tomatoes will release their juices and the top layer will repeatedly get a beautiful light char. Reduce the oven temperature to 400 degrees F. and mix in all remaining ingredients except basil. Mix well and bake for an additional 20 minutes. The sauce is done when all the ingredients are well incorporated and sauce is thick. After removing from the oven stir in chopped basil. Toss with your favourite pasta and garnish with additional basil and grated pecorino Romano.
