ROASTED CAULIFLOWER WITH KALAMATA VINAIGRETTE image

1 2 1/2-3 lb. head of cauliflower
1/4 cup olive oil
1 garlic clove
1-2 Tbsp. lemon juice
1/4 cup kalamata olives, chopped

Steps:

  • 1. Heat oven to 450 with rack in lower third of oven. 2. Cut cauliflower lengthwise into 3/4 inch thick slices. Toss with 2 Tbsp. oil and 1/2 tsp. each salt and pepper. Roast, turning once or twice til golden and tender, about 25 minutes. 3. Mince and mash garlic to a paste with pinch of salt. Whisk together with lemon juice, 2 Tbsp. oil, olives, 1/8 tsp. salt and 1/2 tsp. pepper. 4. Serve cauliflower drizzled with vinaigrette.
