Roasted Beef image

This recipe for roasted beef is super yummy. Honestly, I have never thought about using a tomato base to cook a roast like this. The tomato soup mingles with all the dried herbs. Fresh onion is really a nice touch to the sauce and adds flavor to the meat. The sauce is so good, I recommend pouring over the sliced meat. I used the slow cooker method and it was so easy. Your family and friends will love this easy dinner recipe.

Number Of Ingredients 12

1 - beef roast, any cut
1/2 cup(s) olive oil
2 tablespoon(s) garlic powder, or two cloves minced garlic
1 tablespoon(s) sweet basil
1 large onion, minced
1/2 teaspoon(s) dried rosemary
1/2 teaspoon(s) dried margoram
1/2 teaspoon(s) dried oregano leavess
1/2 teaspoon(s) dried thyme
1/2 teaspoon(s) dried parsley
1 can(s) tomato soup
1/2 can(s) (the soup can) of water

Steps:

  • Wash the roast in WATER, then pat dry with a paper towel.
  • Generously rub down the roast with olive oil. Set aside on the roasting rack.
  • In a small bowl, combine all of the spices, including the onion and garlic.
  • Rub the combined spices onto the oiled roast thoroughly.
  • Place beef in slow cooker or large baking pan.
  • In the small bowl, mix the soup and water together. Pour half of the liquid evenly over the roast.
  • Using a large fork and knife, turn the roast over and pour the remaining liquid evenly on that side of the roast.
  • Roast at 350 degrees in the oven, until desired amount of done-ness, rare, medium or well done. You can use a slow cooker, by using the high setting for three to four hours, or the lower setting for 6-8 hours. I've used my big slow cooker to cook two at a time, for two hours at 450 degrees, very successfully. ENJOY!
