ROAST CHICKEN WITH HERBS image

Number Of Ingredients 6

2 cloves garlic, finely chopped
2 tablespoons dijon mustard
3 tablespoons EVOO
1 tablespoon herbes de Provence
2 chickens (3 pounds each) each cut into 8 pieces
Juice of one lemon

Steps:

  • Preheat the oven to 400 degrees. In a bowl, combine the garlic, mustard, oil, herbs, S&P. Rub the chicken all over with the mustard mixture. Place the chicken, skin side up, on a large rimmed baking sheet. Roast the chicken for 40 minutes or until it is golden brown and cooked through. Sprinkle the chicken with the lemon juice and serve at once.
