Steps:
- Rub salt on the meat then with a small knife poke a few holes (about 5 each side) and stick a slice of garlic and onions in each and let it stand for 30 min. Preheat oven to 350°F. Heat oil in large oven-proof skillet over medium-high heat. Sear beef; cook until browned on all sides, turning occasionally, about 10 minutes. Sprinkle thyme, basil (or rosemary), and pepper on all sides. Add potatoes, carrots and onions arround the roast. Transfer skillet to oven. Roast until thermometer inserted into center of meat registers 140F for medium, about 50 minutes. Cut into thin slices. Great with Yorkshire puddings and red wine.
