Riesling Mango-Pepper Glazed Ham image

This will become your go-to ham for the holiday. It's honestly one of the best I've ever had! The glaze is sweet and spicy with a slight tang from the mustard. Since it's baked uncovered and basted, it gets glazed and crisp around the edges, but nice and moist inside. So good!

1 spiral sliced ham 5-7 lbs
1 c Riesling wine
1 shallot, diced
2 sprig(s) thyme
1/2 c light brown sugar, packed
1/2 c stone ground mustard
1 jar(s) 18 oz, mango-pepper jelly

Steps:

  • 1. Pre-heat oven to 350 degrees. Line a roasting pan with tinfoil.
  • 2. Put ham on a roasting rack in the pan.
  • 3. In a 1 quart saucepan, heat wine, thyme sprigs, and shallot to boiling over medium-high heat.
  • 4. Reduce heat and simmer uncovered until the wine is reduced to ½ cup.
  • 5. Remove from heat and discard thyme sprigs.
  • 6. Stir in mango-pepper jelly, brown sugar, and mustard. Wisk throughly.
  • 7. Brush half of glaze mixture over ham.
  • 8. Bake uncovered 1 hour 30 minutes, basting with remaining glaze mixture every 30 minutes.
  • 9. Cover loosely with foil.
  • 10. Let stand 15 minutes before slicing and serving.
  • 11. Any remaining glaze can be served on the side as a gravy of sorts.
