Rice Pudding Good and Simple image

If you have cooked rice left over from a meal this recipe was so simple and quick. I made a dinner that had white rice and made extra so we could have dessert too. Fast and simple and all smiles when served so Yep it was a keeper. Hope you enjoy too.

3/4 c uncooked rice white
2 c milk
1/3 c white sugar
1/4 tsp salt
1 egg beaten
2/3 c raisins
1 Tbsp butter
1/2 tsp vanilla extract

Steps:

  • 1. FOR RICE RECIPE....In sauce pan, bring 1 1/2 cups water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
  • 2. ONCE YOU HAVE THE RICE....In saucepan, combine 1 1/2 cups COOKED rice, 1 1/2 milk, sugar and salt. cook over medium heat until thick and creamy, 15 5o 20 minutes. Stir in remaing 1/2 cup milk, beaten egg and raisins. Cook 2 minutes more, stirring constantly. Remove from heat, and stir in butter and vanilla. Serve warm.
  • 3. Optional..can sprinkle with cinnomon or nutmeg if desired. This can also be warmed in microwave if it has been cooled for like 15 seconds.
  • 4. You can use New Rice or Left over rice =)
