RHUBARB SPONGE PUDDING image

Sponge Topping:
7 tbsp butter soft
1/2 c. sugar
2 ex-large eggs
2/3 cup a/p flour
1 tsp baking powder
Fruit Filling:
1 lb ripe rhubarb
6 1/2 tbsp sugar

Steps:

  • Heat oven to 350 deg. Cream the butter and sugar together in a bowl unti light. Add the eggs, one at a time, beating well. Sift the flour and baking powder into the bowl, folding it through quickly with a large metal spoon or spatula. Cut rhubarb into 3/4" lengths. Arrange into a buttered 1 quart baking dish and scatter with the sugar. Spoon batter on top of the fruit and bake for 50 - 60 min. until the topping is a golden sponge cake and the rhubarb is tender. If top browns to quickly cover lightly with foil.
