Rhubarb Ice Tea image

This Rhubarb Ice Tea is a tangy-sweet beverage. Plus it actually is made without tea. But it's very good and quite refreshing.

Number Of Ingredients 3

8 cups diced rhubarb, can use frozen rhubarb (*see note)
8 cups water
1-1/2 cups sugar

Steps:

  • 1. In a large heavy saucepan, add the rhubarb and water.
  • 2. Bring to a boil, then reduce the heat, and simmer for 1 hour.
  • 3. Strain the rhubarb, then add to a heat-proof pitcher.
  • 4. Add the sugar; stir well, and allow to cool before placing in the refrigerator.
  • 5. Chill in the refrigerator until ready to serve.
  • 6. When ready to serve; pour the chilled tea in glasses filled with ice.
  • 7. *Note: If making this tea using frozen rhubarb, simmer (covered) for about 1 hour and 30 minutes; stirring occasionally.
