Steps:
- 1. Preheat oven to 350 degrees. In a medium bowl, mix together 2 cups flour, powdered sugar and butter until it forms a dough, or small crumbs. Press into the bottom of a 9 X 13 inch, greased baking dish.
- 2. Bake for 10 minutes in the preheated oven. While this bakes,whisk together the sugar, salt, flour and eggs in a large bowl. Stir in rhubarb to coat.
- 3. Spread evenly over the baked crust when it comes out of the oven. Do not let the crust cool.
- 4. Return to oven and bake for another 35 minutes,or until rhubarb is tender. I had to add another 10 minutes. Add nutmeg as an option. Cool and cut into squares to serve.
