My neighbor gave me a rhubarb plant. I planted it in my raised garden and Wah-LA, I had rhubarb! I printed up a half a dozen or so, of rhubarb recipes and waited for it to be ready to pick. Number Of Ingredients 9

2 c all purpose flour
2/3 c powdered sugar
1 c butter, softened
2 c white sugar
1/2 c all purpose flour
1 1/2 tsp salt
4 eggs, beaten
5 c chopped fresh rhubarb
opt: nutmeg

Steps:

  • 1. Preheat oven to 350 degrees. In a medium bowl, mix together 2 cups flour, powdered sugar and butter until it forms a dough, or small crumbs. Press into the bottom of a 9 X 13 inch, greased baking dish.
  • 2. Bake for 10 minutes in the preheated oven. While this bakes,whisk together the sugar, salt, flour and eggs in a large bowl. Stir in rhubarb to coat.
  • 3. Spread evenly over the baked crust when it comes out of the oven. Do not let the crust cool.
  • 4. Return to oven and bake for another 35 minutes,or until rhubarb is tender. I had to add another 10 minutes. Add nutmeg as an option. Cool and cut into squares to serve.
