Rhubarb Custard Crunch image

1 units bottom layer
4 cups rhubarb
1 cups sugar
2 tablespoons flour
1 units eggs
1 cups milk
3 tablespoons butter
1 units top layer
1 cups sugar
1 cups flour
1 tablespoons baking powder
0.25 teaspoons salt
1 units eggs

Steps:

  • In a 8 x 8 glass pan:
  • Bottom Layer: Place rhubarb in pan. Mix sugar, flour, egg and milk. Pour over rhubarb and dot with butter.
  • Top Layer: Mix. Mixture will be crumbly.
  • Pour over rhubarb.
  • Bake 350 for 40 minutes until top is brown. Enjoy!!
