Steps:
- Heat oven to 350ºF.
- Line 13x9-inch pan with foil, with ends of foil extending over sides; spray with cooking spray. Mix cornstarch and water until blended.
- Bring rhubarb, 1-1/4 cups granulated sugar and vanilla to boil in medium saucepan on medium heat, stirring frequently; simmer on medium-low heat 5 min. or until rhubarb is softened, stirring occasionally.
- Stir cornstarch mixture. Add to rhubarb mixture; cook and stir 1 to 2 min. or until thickened. Remove from heat.
- Combine oats, flour, brown sugar and nuts in large bowl. Add butter; mix until well blended and crumbly. Press half the oat mixture onto bottom of prepared pan. Bake 10 min. Meanwhile, mix Neufchatel, eggs and remaining granulated sugar until blended.
- Pour Neufchatel mixture over crust; top with rhubarb mixture and remaining oat mixture.
- Bake 25 to 30 min. or until golden brown. Cool completely. Use foil handles to lift dessert from pan before cutting into bars.
