This recipe is from Paula Deen and all of the online reviews says it the best RED VELVET WHOOPIE PIES they have ever tasted. So I tried it for myself and baked them for my daughter's birthday on March 12th and to tell you the truth they are delicious. ENJOY!

Steps:
- 1. Preheat oven 375 degrees.
- 2. Mix flour, cocoa, baking soda, baking powder, and salt in a small mixing bowl, set aside.
- 3. In a large mixing bowl cream together butter and sugar until light and fluffy, about 4 minutes. Add eggs one at a time, beating after each addition. Then beat in the buttermilk, vinegar, vanilla, and red food coloring.
- 4. Once combined, add the dry ingredients to wet ingredients. Mix until throughly combined.
- 5. Onto a parchment paper lined sheet tray, drop batter using an ice cream scoop, forming 2-inch round circles(dough will be sticky like). Bake 8-10 minutes (mine baked for 10 min.). Allow to cool for a a few minutes on the baking sheet, then remove to wire rack to cool completely.
- 6. Filling: In a large mixing bowl beat cream cheese, margarine, and vanilla until smooth. Add the sugar and on low speed, beat until incorporated. Increase speed to high and mix until fluffy. Add pecan and mix with spoon until pecans are incorporated. Spread filling between two cooled cookies.
- 7. Note: This will only make about five BIG whoopie pies. If you want more pies then use a smaller ice cream or cookie scoop. ENJOY!
