Red or Yellow Pepper Sauce image

Number Of Ingredients 10

1 large red or yellow pepper
5 celery ribs
3 shallots, peeled and minced
2 medium carrots, peeled
1 cup fresh parsley
2 tablespoons olive oil
Salt to taste
1 tablespoon white wine vinegar
1 tablespoon sugar
Hot pepper flakes, optional

Steps:

  • Finely chop the pepper, celery, shallots, carrots and parsley, and combine. Place them in a small saucepan with the oil and salt. Cook over a medium flame for 30 minutes. Add the vinegar and sugar, and cook for 5 more minutes.
