RASPBERRY - ALMOND SHORTBREAD COOKIE image

Number Of Ingredients 9

1 cup butter, softened
2/3 cup sugar
1/2 tsp almond extract
2 cups flour
1/2 cup seedless raspberry jam
coarse sugar
1 cup powdered sugar
2-3 tsp water
1 1/2 tsp almond extract

Steps:

  • 1. Beat butter, add granualted sugar, 1/2 tsp almond extract. Then beat in flour. 2. Cover and chill 1 hr til dough easy to handle then shape into 1 inch balls. Use thumb to indent, add 1/2 tsp jam to each cookie, sprinkle with coarse sugar. 3. Bake for 10 minutes. Cool 4. Meanwhile combine powdered sugar, 1 tsp water, and 1 1/2 tsp almond extract. Add enough remaining water to form a drizzle consistency. Drizzle over cookies.
