QUINOA WITH CHICKPEAS AND PRESERVED LEMON image

19 oz canned garbanzo beans, drained, rinsed
2 Tbsp olive oil
6 cloves garlic, chopped very coarsely
1 small onion, sliced
Salt & pepper to taste
1 cup uncooked quinoa
1/2 cup parsley, chopped
15 large green olive, pitted
1/4 Tbsp fresh lemon juice, (juice of 1/2 lemon)
The thinly-sliced rind of about 3 preserved meyer lemons

Steps:

  • Preheat oven to 350. Combine garbanzo beans, olive oil, garlic, onion and salt and pepper in a covered dish. Roast for about 45 minutes, until garlic is softened, stirring occasionally. Cool. Meanwhile, cook quinoa. When it is ready, add all remaining ingredients and salt and pepper to taste.
