Quick Bread Base image

I love making quick breads and i've been using this particular bread base for a very long time. I use it for everything EXCEPT ZUCCHINI. My family loves the flavour and the fact that it stays sticky on top. (Mmm). This is one recipe that they demand every year for the holidays.

Number Of Ingredients 9

2 c sugar, white
1/2 c butter, salted
1/2 c margarine
2 tsp baking soda
2 Tbsp sour milk
4 eggs
3 c favourite veggie or fruit pulp/puree
4 c flour, all purpose
2 tsp vanilla

Steps:

  • 1. Preheat oven to 350F and grease the loaf pans liberally.
  • 2. In a large bowl cream sugar, butter and margarine until slightly fluffy.
  • 3. In a small bowl combine sour milk and baking soda, then set aside.
  • 4. Add eggs to sugar mix and mix well.
  • 5. Add pulp/puree to sugar mix and blend well.
  • 6. Add soda mixture and flour to large bowl and mix thoroughly.
  • 7. Pour into a well greased loaf pan, then let set for 10 minutes.
  • 8. Bake at 350F for 1 hour. DO NOT OVERBAKE. The top will crack, but do not panic.
  • 9. After cooling for 10 minutes remove from the pan and cover with plastic wrap, using tooth picks to keep the wrap from sticking to the top.
