Steps:
- 1. Slice mushrooms and dice peppers. 2. Cut chicken breast into 1 inch cubes. 3. Heat oil in medium sized skillet over medium heat and add chicken breast. 4. Sauté chicken until completely white and starting to brown, then add yellow pepper, mushrooms, and spices (add more or less red pepper flakes for a milder or spicier dish). Stir constantly, and reduce heat when peppers begin to brown. 5. Add soy sauce and chicken stock, and cook on low heat for roughly 5 minutes or until chicken is thoroughly cooked. If skillet becomes dry, add a small amount of water or chicken stock. 6. Add peanut butter and stir. If eating by itself, this should be the perfect thickness, but if serving over rice, you will need to add more chicken stock or water.
