Quick and Easy Jerk Chicken image

you don't have to go to the islands to get some good jerk chicken. grill these babies up and serve with a salad and some beans and rice.

Number Of Ingredients 16

3-4 lbs chicken pieces
1-3 finely chopped scotch bonnet pepper (any hot pepper)
¼ cup extra virgin olive oil
3 tbsp lime juice
2 tbsp cider vinegar
3 tbsp spiced rum
2 tbsp kosher salt
2 tbsp onion powder
2 tbsp dried tyme
2 tbsp allspice
2 tbsp ground ginger
2 tbsp brown sugar
2 tbsp cumin
2 tbsp black pepper
2 tbsp garlic powder
2 tsp cayenne pepper

Steps:

  • 1. Combine all ingredients. This will form a paste. Coat chicken pieces with paste/marinate. Marinate for at least 4 hours, best to marinate over night. Grill or bake chicken until chicken juices run clear.
  • 2. Put any remaining jerk seasoning in zip lock bag and freeze until you need it.
