Quick and Easy Coq Au Vin image

This an easy recipe to put together with great results. Your family will think it cooked all day long.

4 slice bacon, cut into 1/2 inch pieces
6 bone-in, skinless chicken thighs
3/4 tsp dried thyme, crushed
1 large onion, coarsely chopped
4 clove garlic, minced
1/2 lb small red potatoes, halved or quartered depending upon size
10 mushrooms, quartered
1 can(s) 14.5 oz. can italian-flavored stewed tomatoes
1 1/2 c dry red wine

Steps:

  • 1. In a 4-qt. stockpot, cook bacon until browned, but not fully cooked. Meanwhile, sprinkle chicken with thyme, salt and pepper.
  • 2. Brown chicken over medium high heat in olive oil. Remove chicken and bacon to a plate and add the onion - saute until tender and translucent. Add garlic and cook approx. 1 minute.
  • 3. Add potatoes, mushrooms, tomatoes and wine. Add bacon and nestle chicken pieces in sauce . Cook uncovered for approx. 25 minutes or until chicken is cooked through, potatoes are tender and sauce has thickened, stirring occasionally.
  • 4. Garnish with chopped parsley, if desired.
