PUMPKIN RAISIN BARS image

These bars smell so good when baking because of the spices. This was a cake and I changed it over to make bars because I was looking for finger foods for a party. My Mom always made this cake around the Christmas Holidays because she said it made the house smell good.

Number Of Ingredients 19

2 c flour
2 c sugar or sugar substitute
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp salt
1/2 tsp cloves
1 c oil (i use corn oil)
4 eggs
1 can(s) 15 oz can - (2) cups pumpkin
1/2 c chopped nuts (nuts can be left out if anyone has an allergy)
1/2 c raisins
FROSTING
1/3 c margarine or butter, softened
1 3 oz pkg. of cream cheese, softened
2 c powdered sugar
1 Tbsp milk
1 tsp vanilla

Steps:

  • 1. Heat over to 350 degrees.
  • 2. Grease 15" x 10" x 1" baking pan.
  • 3. In a large bowl combine all bar ingredients except nuts and raisins.
  • 4. Beat on low speed until moistened.
  • 5. Beat 2 minutes at medium speed.
  • 6. Stir in nuts and raisins.
  • 7. Pour into greased pan.
  • 8. Bake for 25 to 30 minutes or until toothpick inserted in center comes out clean. COOL COMPLETELY.
  • 9. In a smaller bowl, combine all frosting ingredients and beat until smooth.
  • 10. Frost cooled bars and store in refrigerator. Makes 48 bars.
  • 11. If you would like, you can make a 13" x 9" Pumpkin Raisin Cake. Bake for 40 to 50 minutes.
