Pumpkin Bars image

This is my mother's recipe and is rather delicious! Not too sweet, and perfect for the Fall time of year. Enjoy!

Number Of Ingredients 19

4 - eggs
2 cup(s) sugar
1 cup(s) vegetable oil
15 ounce(s) pumpkin, canned or cooked
MIX THE ABOVE INGREDIENTS IN LARGE BOWL. SIFT THE FOLLOWING & ADD TO ABOVE, STIR
2 cup(s) flour
1/2 teaspoon(s) salt
1/2 teaspoon(s) cloves
2 teaspoon(s) baking powder
2 teaspoon(s) cinnamon
1/2 teaspoon(s) nutmeg
1/2 teaspoon(s) ginger
1 teaspoon(s) baking soda
BAKE AT 350 FOR 25 MINUTES IN 9X13 CAKE PAN
FROSTING:
6 ounce(s) cream cheese, softened
1 teaspoon(s) vanilla
3/4 stick(s) butter, softened
4 cup(s) powdered sugar

Steps:

  • Mix first 4 ingredients in large bowl.
  • Sift the next 8 ingredients and add to the above, stir.
  • Bake at 350 for 25 minutes in 9x13 cake pan.
  • Mix the last 4 ingredients with mixer in bowl. Use to frost cooled pumpkin cake.
