PUERTO RICAN BEEF STEW image

Number Of Ingredients 17

2 lb beef
1 green pepper, chopped
4 sweet chili peppers, chopped
2 onions, chopped
4 cloves garlic
cilantro
2 Tbsp vinegar
1/2 tsp dried oregano
1/2 cup tomato sauce
2 bay leaves
1 Tbsp salt
1/2 lb carrots, sliced
1 can green peas
1/2 lb potatoes, cubed
12 green olives
1 Tbsp capers
1/4 tsp salt

Steps:

  • Heat oil in skillet. Brown beef. Add next ten ingredients and bring to a boil. Reduce heat, cover and simmer 1 hour. Drain peas and set aside. Reserve liquid. Add liquid to the pot. Simmer for 1 hr. Add potatoes, olives, capers and salt. Simmer for 1 hr. Add peas. Serve over rice.
