Pressure-Cooker Cranberry Apple Red Cabbage image

1 Medium head red cabbage, coarsely chopped
1 14-oz can whole berry cranberry sauce
2 Medium Granny Smith apples, peeled and coarsely chopped
1 Medium onion, chopped
1/2 cup Apple cider vinegar
1/4 cup Sweet vermouth, white wine, or unsweetened apple juice (optional)
1 teaspoon Kosher salt
3/4 teaspoon Caraway seeds
1/2 teaspoon Coarsely ground black pepper

Steps:

  • Combine all ingredients; transfer to an 8.5-quart pressure cooker. Lock lid; close pressure release valve. Adjust to pressure cook on high for 3 minutes. Allow pressure to release naturally for 5 minutes then quick release remaining steam. Serve with a slotted spoon.
