Pound Cake With Berries And Nectarines image

3 - eggs
1/4 cup(s) whole milk
2 teaspoon(s) vanilla
1 1/2 cup(s) cake flour
3/4 cup(s) sugar
1 teaspoon(s) baking powder
1/4 teaspoon(s) salt
3/4 cup(s) unsalted butter, softened
4 cup(s) sliced fresh nectarines
1 cup(s) fresh blackberries
1 cup(s) fresh blueberries
1/4 cup(s) honey
2 tablespoon(s) almond flavored liqueur
1 teaspoon(s) orange zest
- sweetened whipped cream

Steps:

  • Preheat oven to 350F. Spray a 9x5 inch loaf pan with nonstick baking spray with flour. Set aside. In a medium bowl, whisk together eggs, milk, and vanilla. In a large bowl, stir together flour, sugar, baking powder, and salt. Add butter and half of egg mixture to flour mixture; beat at low speed with an electric mixer until combined. Increase speed to medium high; beat until fluffy, approximately 1 minute. Scrape down sides of bowl, and add remaining egg mixture, 1/4 cup at a time, beating 30 seconds after each addition. Spoon batter into prepared pan, smoothing top with an offset spatula.
  • Bake until a wooden pick inserted in center comes out clean, approximately 1 hour. Let cool in pan 10 minutes. Remove from pan, and let cool completely on a wire rack. Cut into slices. In a medium bowl, stir together nectarine, berries, honey, liqueur, and zest. Let stand 5 minutes. Serve over pound cake slices with whipped cream.
